« We switched our entire ice-cream range to their Grade A beans. The value-for-money on 25 kg volumes is unbeatable. »
Feature — Inside Mahomby
Vanilla,
shaped by
the SAVA region.
Eleven years sourcing, curing, sorting and shipping the finest Bourbon vanilla beans — directly from our partner families in Virembina and Nosy Be (Antalaha municipality) to pastry chefs, roasters and fine-dining restaurants.
Raw material, not a commodity.
“Madagascar vanilla is not an ingredient: it is an encounter between a climate, human hands, and nine months of patience.”
Mahomby — “the one who succeeds” in Malagasy — was founded on a simple conviction: vanilla quality is decided long before harvest. In the choice of soil, the elevation of the vines, the exact window of hand pollination — eleven weeks, not one more.
We cultivate our own plots in Virembina and Nosy Be (Antalaha municipality) and work with thirty-five partner farming families along the same SAVA coastal strip. Every batch is traced to the village, sometimes down to the vine. This precision has a price; it also has a meaning.
Three chapters to understand the house.
SAVA, the craft, the result. Everything we do fits within these three movements.
The terroir
North-eastern coastal strip, humid tropical climate, volcanic soils. Why nothing grows quite like here.
The craft
Hand pollination, blanching, sweating, shade drying. Nine months between the flower and the cured bean.
The result
Grade A and Grade B beans, micronised powder, vanilla caviar. For chefs and industrial buyers.
Five formats, one standard.
From whole beans to processed formats, each reference ships with its origin sheet, curing date and vanillin content.
Chefs, pastry chefs,
industrial buyers.

“The finest vanilla I have tasted in ten years.”
